Sadık Künefe (Mardin)

The Mardin address of Sadık Künefe is in the Yenişehir quarter of Artuklu, the province's central district. The trade the shop rests on is burma kadayıf — shredded pastry wrapped tightly around a filling and baked — and the house is unusually direct about where that trade comes from: in this region the craft is associated with Diyarbakır, was learned first-hand from Armenian masters generations ago, spread through families from Bingöl, and has been carried forward since.
