Overview

Ordinarius began in Eskişehir on 22 July 2018 and started roasting its own coffee on 12 December 2020, turning a coffee bar into a roastery that controls the bean from green to cup. The business runs two addresses, both published: this record covers the café on Darcan Sokak in the Sümer neighbourhood of Odunpazarı. The second address, in Güllük on the Tepebaşı side of the city, is the roasting workshop and belongs to a separate record; it is not part of this entry.

One thing is served here, and it is served carefully. Roast profiles are split between filter and espresso, and single origins are listed under their own names — La Argentina is the one the company puts forward on its home page. In its own account, Ordinarius selects green coffee from established international suppliers, roasts each lot to a specific and repeatable profile, and keeps the gap between sourcing and roasting short so that what reaches the counter is fresh. Brewing equipment is sold alongside the beans.

The roastery side of the business extends past retail: it runs coffee and cupping workshops, gives corporate training, and consults on setting up café bars for other operators. Its blog works through the technical ground behind all this — the chemistry of brewing water, what the equipment changes, how quickly roasted coffee loses freshness. The café is open every day of the week from nine in the morning until one at night, a span wide enough to hold both the daytime laptop crowd and late conversations.
