In the Diclekent quarter of Kayapınar, one of Diyarbakır's newer western districts, Onur Ocakbaşı runs on a single idea: döner grilled over coals and carried straight to the table with rice or on its own. Portion size and meat quality are the two points that keep coming up in customer feedback, alongside the semolina helva sent out at the end of the meal.
