Kokoreççi Baki Usta was founded in 1982 in Şemikler, part of İzmir's Karşıyaka district. The brand markets itself with the line 'flavour kept constant from past to present, clean-production İzmir kokoreç,' and has since expanded to two further points in Bornova and Bostanlı; this record covers the founding Şemikler address. Its range is built around kokoreç — grilled lamb intestine — served as two-piece 'atom' portions, halka portions sold in tens, twenties, or thirties, whole-skewer kokoreç, and almond- or throat-cut milk-lamb sweetbread (uykuluk). The Şemikler branch closes on Sundays and runs from late morning to early evening on other days. The entire menu is built around grilled meat and offal, and nothing in the sourced material ties the shop to alcohol or pork. With more than forty years behind it, the Baki Usta name is one of Karşıyaka's fixed points for kokoreç.
