Kokoreççi Asım Usta traces back to 1960, when Asım Usta began selling kokoreç from a three-wheeled cart. By the shop's own account, the business grew over time into two nearby locations in İzmir's Bornova area; this record covers the Çamdibi address on Burak Reis Caddesi. Kokoreç is a street dish made from grilled lamb intestine wrapped around seasoned offal fat, served in bread or on a plate — it is the shop's sole focus rather than one item on a wider menu. Its own materials place particular weight on hygiene standards, treating that as the core of its quality claim for a street-food format. A kokoreç stall is, by definition, a grilled-offal operation, and nothing in the sourced material ties it to alcohol service. With more than sixty years behind it, the Asım Usta name has become one of the addresses İzmir associates with kokoreç.
