What Does 'Refined' Actually Mean?
The white sugar on a supermarket shelf never existed in that form in nature. Refining is the process that turns the dark, raw syrup extracted from sugarcane or sugar beet into sugar that is nearly pure sucrose.
So "refined" describes a process, not an ingredient category. Colour and odour compounds are stripped out with activated carbon or ion-exchange resin, the resulting syrup is evaporated and seeded with crystals, then spun in a centrifuge and dried. What comes out is a standardized, high-purity product.
Cane and Beet Don't Follow the Same Path
Refined sugar can start from two different plants, and the two routes don't begin the same way. Raw cane sugar arrives at the refinery coated in a sticky brown film that has to be softened off in a separate step before the crystal can be purified further.
Beet sugar skips that stage. Sugar is extracted from washed, sliced beet root by diffusion, the raw juice is treated with lime, then evaporated and crystallized under vacuum — and the white sugar that comes out needs no further refining.
Where the Molasses Goes
As raw syrup is boiled down, sucrose crystallizes out in repeated rounds; the syrup left after each round is boiled again, and its sugar content drops with every pass. What remains once no more crystals can be economically recovered is molasses — the residual by-product of that process.
Each boil leaves behind a different grade. First-boil (A) molasses has the highest sugar content and the mildest taste, making it the one most commonly used in cooking. Second-boil (B) molasses is slightly bitter, and the third and final boil yields dark, thick blackstrap molasses — the most bitter and least sweet grade, used occasionally in baking but more often for ethanol production, cattle feed and yeast production.
How Brown Sugar Actually Differs From Refined Sugar
Not all brown sugar is made the same way. Natural brown sugar keeps part of the molasses from the original cane juice and gets its colour from it. Most of what sits on supermarket shelves, though, is made the other way around: molasses is added back onto fully refined white crystals, and the amount added controls how dark it turns out. Wash either one, and the difference shows — molasses-coated sugar reveals white crystals underneath, natural brown sugar doesn't.
Powder, Cubes, Granules: Same Sugar, Different Shape
Powdered sugar, cube sugar, table sugar and coarse sanding sugar are chemically identical — refined sucrose. What differs is crystal size and whether the sugar has been mechanically reshaped. Powdered sugar is simply ground fine; cubes are formed by lightly moistening granulated sugar, pressing it into molds and drying it. None of these forms is more "pure" than another — the difference is physical, not chemical.
A Middle Category: Turbinado and Demerara
Between fully refined white sugar and brown sugar with molasses added back sits a third category: minimally processed cane sugars like turbinado and demerara. These are made from crystallized, partially evaporated cane juice that's been spun in a centrifuge to remove only part of its molasses, not all of it.
The result is large, amber-golden crystals that are roughly 97 to 99 percent sucrose — less processed than white refined sugar, but not as dark or moist as natural brown sugar. It's a distinct production step, not a blend of the other two.
More Than a Sweetener in the Kitchen
Sugar's job in a recipe often goes beyond taste. It's hygroscopic, meaning it binds moisture and slows staling in cakes and cookies. In yeasted dough, it's food for the yeast itself, which converts fermentable sugars into carbon dioxide and ethanol to make dough rise.
At high heat, sucrose caramelizes — breaking down at around 170°C (338°F) into the compounds that give caramel its browned colour and buttery aroma. In jams and preserves, sugar used at high concentration acts as a preservative. And in cakes, cookies and ice cream, it plays a structural role in texture that has nothing to do with sweetness.
