Harold McGee: The Writer Who Translated Food Science for Everyone
Harold McGee is not a chef; he is an American science writer. What made him well known is not a restaurant, but a book that explains why food behaves the way it does under heat, salt, and time: On Food and Cooking.
The book replaced "do it this way" with "here is why it works," moving knowledge locked in technical literature into language home cooks and professional chefs could actually use.
From Literature to Food Science: An Unlikely Path
Born in Cambridge, Massachusetts, and raised in Elmhurst near Chicago, McGee studied math, physics, and astronomy at the California Institute of Technology, intending to become a scientist. After two years he realized he loved thinking about ideas more than running lab work, and switched fields, graduating from Caltech in 1973 with a degree in literature.
He then earned a PhD at Yale under critic Harold Bloom, writing his dissertation on the romantic poetry of John Keats, and stayed on to teach writing and literature — without landing a tenure-track job.
The turn toward food science was accidental. At a dinner party, someone asked why beans cause flatulence; searching for an answer in the Yale library, McGee found the science scattered across technical journals but never translated for general readers. That search became the seed of On Food and Cooking.

On Food and Cooking: Mechanism, Not Recipes
On Food and Cooking: The Science and Lore of the Kitchen was first published by Scribner in the United States in 1984, running 704 pages. McGee rewrote most of it for a 2004 second edition, expanding it to 896 pages with about a hundred new illustrations.
The book is organized in three parts: ingredients (from dairy and eggs to meat, produce, grains, bread, sauces, sugar and chocolate, and wine and spirits), food and the body, and the principles of cooking. It includes a handful of historical recipes — such as a 1375 meat jelly recipe by Taillevent — but is not a modern recipe book.
McGee described his own job this way:
Chef Thomas Keller told Gourmet magazine in 2004 that the book was taught as a standard reference at the Culinary Institute of America for each new generation of chefs, calling it as authoritative on science as Auguste Escoffier is on culinary technique.

Confirming and Debunking Kitchen Lore
McGee's method cut both ways on traditional kitchen wisdom: some of it held up scientifically, some of it didn't.
On the confirmed side sits his first scientific paper. In 1984, McGee published "Why whip egg whites in copper bowls?" in Nature with his wife Sharon Long and botanist Winslow Briggs, explaining a long-known but unexplained kitchen practice: why whipping egg whites in a copper bowl makes a more stable foam.
On the debunked side, the best-known example is the belief that searing meat seals in its juices. McGee traced the idea to 19th-century German chemist Justus von Liebig and put it bluntly:
Two steaks cooked to the same doneness, he explained, lose more moisture when one of them is seared first.
“It's not an old wives' tale. It's an old chemist's tale.”
Beyond the Kitchen: Nose Dive and Later Work
McGee's scope eventually moved past the kitchen. Nose Dive: A Field Guide to the World's Smells, published in 2020, applied the same mechanism-first method to smell, extending it beyond food to the chemistry of scent generally.
He also wrote shorter reference books, including Keys to Good Cooking (2010) and Modern Gastronomy A to Z (2010), both continuing the explain-the-mechanism approach On Food and Cooking established.
Limits: Not a Cookbook
The most repeated assessment of On Food and Cooking is that it isn't a cookbook. Reviewing it for The Guardian in 2004, Tom Jaine wrote that it is "not a recipe book but rather a repertoire of essential facts from which the intelligent cook can make a recipe or, better still, understand one."
That is both the book's strength and its limit: a reader looking for step-by-step instructions won't find them here — instead, they'll find an explanation of why a given technique works. It remains a widely used reference, but not a substitute for a cookbook.
