Fermentation Is No Longer Just a Preservation Method
Outside Noma's main kitchen in Copenhagen, a small four- to five-person team works in a separate building developing miso, koji, and soy-sauce-style condiments. Canadian chef David Zilber joined the kitchen in 2014, moved to this dedicated lab a year later, and eventually took charge of it.
That setup captures a broader shift: fermentation, once mainly a way to keep food from spoiling, is now treated in fine dining as a flavor-development tool in its own right, run under controlled lab conditions rather than left to chance.
Garum: An Ancient Sauce Back on the Plate
Garum, a fermented fish sauce used across Phoenician, Greek, Roman, Carthaginian, and Byzantine cuisines, is thought to have tasted similar to today's Asian fish sauces. Traditionally, oily fish like anchovies, sardines, mackerel, or tuna were crushed and fermented in brine — under ideal conditions, the process took about 48 hours.
In 2017, a chef in Cádiz, Spain, reworked the ancient sauce into a fish salad after archaeologists found evidence of garum in amphorae recovered from the ruins of Pompeii, dating to 79 AD. Today it functions as an umami base in fine dining kitchens, standing in for meat or vegetable stock.
Koji: A Mold That Breaks Down Starch and Protein
Koji is Aspergillus oryzae grown on rice, barley, or soy. It spreads quickly through the grain and secretes amylases that convert starch to sugar — the basis of sake and shochu production — while pectinases and peptidases break down cell walls and proteins to build umami in miso and soy sauce.
Miso: From Five Days to Several Years
Miso is made by fermenting soybeans with salt and koji, sometimes with rice, barley, or seaweed. Fermentation time ranges from five days for light, sweet varieties to several years for darker, deeper miso pastes — a range chefs use to pull very different intensities of umami from the same base ingredients.
Vinegar: Same Chemistry, Two Different Speeds
Vinegar forms when acetic acid bacteria oxidize ethanol into acetic acid. Traditional production is slow, taking a few months to a year; fast industrial methods compress the same reaction into one to three days. High-end vinegars like balsamic and sherry vinegar rely on the slow route, used in fine dining as a flavoring base rather than just an acid.
Lacto-Fermented Vegetables: Bacteria Doing the Work
Lactic acid fermentation relies on bacteria naturally present on vegetable skins, which dominate in a low-oxygen brine and convert sugars into lactic acid — the mechanism behind sauerkraut (driven mainly by Leuconostoc) and kimchi. Fine dining kitchens increasingly use this technique to turn surplus or imperfect vegetables into a new flavor layer instead of discarding them.
Kombu: Not Fermented, But Indispensable
Kombu is an edible kelp, usually sold dried or vinegar-pickled — it isn't itself a fermented product. Its high glutamic acid content made it central to Kikunae Ikeda's 1908 identification of umami as a taste, and it remains dashi's core ingredient, often used alongside garum, miso, and koji in modern fermentation-driven kitchens.
Sustainability: Fermentation's Link to Food Waste
Fermentation predates human history and remains one of the oldest food preservation techniques; food-waste research identifies preservation as one of the most effective ways to prevent waste in the first place. René Redzepi's approach at Noma — using fermentation and dehydration to use as much of a plant, animal, or fish as possible — turns that principle into practice: fish offcuts become garum, vegetable scraps become lacto-ferments, and what would otherwise be discarded becomes a new ingredient.
