Pehlivan Tavukçuluk

In Turkey a tavukçu is a distinct trade rather than a section of a menu: poultry gets its own spit, its own counter and often its own shopfront, kept clear of the red-meat grill. Pehlivan runs exactly that separation on M. Kafadar Caddesi in the Aksaray quarter of Antakya, where this poultry counter stands a few doors from the group's meat-döner salon; the company lists the two under separate headings, with separate addresses and separate phone lines. Two chicken items are published: chicken döner, described with its house sauce, fries and mayonnaise, and tuzda tavuk — a whole bird encased in a thick salt crust and baked, the crust cracked open at the table, so that the meat cooks in its own steam. The remainder of the group's six menu categories covers meat döner, lahmacun and kebabs. Two headings, köfte and meze, remain in the navigation but carry no published products at all. The business dates itself to 2009. It publishes neither opening hours nor a price band.
