Astringency Comes from Catechins, Not Bitterness
The dry, puckering sensation in green tea isn't a taste — it's a mouthfeel. It comes mainly from catechins, a group of polyphenols led by epigallocatechin gallate (EGCG). Bitterness, by contrast, is a true taste sensation, and in tea it's driven mainly by caffeine and related methylxanthines.
Because green tea leaves are heated right after harvest — steamed or pan-fired — rather than left to oxidize, these catechins survive largely intact, which is why green tea's astringency reads as sharp and fresh.
Why It Feels Like a Texture, Not a Flavor
Catechins and tannins bind to proline-rich proteins in saliva, forming complexes that break down the mouth's lubricating film. That loss of slickness is what produces the dry, puckering sensation — a tactile effect, not a signal from taste buds.
Brewing Variables That Change the Result
Water temperature and steeping time are the biggest levers: hot water and long steeps pull excessive tannins into the cup, producing a bitter, astringent brew regardless of leaf quality. Higher-grade green teas are typically steeped cooler, shorter, and multiple times. Leaf-to-water ratio matters too — more leaf in the same time and temperature extracts more catechins and caffeine.
Theanine's Balancing Act
L-theanine, an amino acid that reads as umami and lightly sweet, offsets some of the perceived astringency and bitterness. Shading tea plants before harvest — the method used for matcha and gyokuro — raises theanine levels, which is part of why shade-grown teas often taste rounder.
