One Plant, Two Processes
Green tea and black tea both come from Camellia sinensis. What separates them isn't the plant, the cultivar, or the region — it's whether the leaf is allowed to oxidize after harvest. Green tea is heat-treated almost immediately to stop oxidation before it starts; black tea is withered, rolled, and left to oxidize fully before drying.
Steamed, Pan-Fired, or Fully Oxidized
Green tea processing splits along a geographic line: Japanese green teas are typically steamed, producing a sweeter, grassier cup and a cloudier liquor, while Chinese green teas have been pan-fired in a dry wok since the early Ming dynasty, pushing the flavor in a different, more toasted direction. Black tea takes the opposite path — withering, then rolling or CTC processing, then a controlled oxidation stage (loosely called "fermentation," though no real fermentation occurs) that converts catechins into theaflavins and thearubigins, the compounds behind its reddish-brown color.
Brewing Temperature Is the Real Divide
Green tea is generally steeped between 61-87°C (142-189°F) for 30 seconds to three minutes, with higher-grade leaves brewed cooler, shorter, and multiple times. Black tea is steeped much closer to boiling, around 90-98°C (194-208°F), for three to five minutes. Oversteeping either tea pulls too many tannins into the cup — but the temperature that triggers it is different for each.
Caffeine Depends on More Than Color
Both teas contain caffeine, since both come from the same plant. How much ends up in the cup depends on cultivar, leaf position, water temperature, and steeping time — not simply on whether the tea is green or black. Sources disagree on which type runs higher on average, so a firm milligram comparison isn't reliable here.
Why Green Tea Is the More Fragile of the Two
Because black tea's oxidation is already complete, it holds its character for months at room temperature if kept away from light and moisture. Green tea, still chemically closer to a fresh leaf, is far more sensitive — refrigeration or freezing with minimal temperature swings is the usual recommendation for keeping it at its best.
