From Leaf to Cup: The Journey of Tea

One Plant, Six Teas

White, yellow, green, oolong, black, and dark tea (pu-erh among the best known) all come from a single species, Camellia sinensis, in the family Theaceae. What separates the six categories is not the plant but how far the leaf is allowed to oxidize before that process is stopped — from barely at all in white tea to fully in black tea, with dark tea sitting outside that scale entirely because its color comes from microbial fermentation rather than enzymatic oxidation.

Varietal and Terroir

The small-leaf China type (var. sinensis) is native to southeastern China and more cold-tolerant, forming the base of most green, yellow, white, and oolong teas. The large-leaf Assam type (var. assamica) is native to the warm, humid lowlands of southern Yunnan and Assam, and is favored for dark teas like pu-erh and robust black blends. Altitude matters too: the plant needs at least 1,200mm of annual rainfall, and many high-quality teas are grown up to 2,000 meters, where slower growth concentrates flavor before a single leaf is picked.

Plucking and Withering

The standard rule is 'two leaves and a bud', taken from the top 25-50mm of the bush; a healthy bush produces a new flush every 7-15 days. Hand-plucking avoids the bruising that machine harvesting causes, though at least 70% of the world's tea bushes are now harvested by non-hand methods. Withering follows: leaves lose roughly a third of their moisture over 8-14 hours, during which proteins break down into free amino acids that shape the eventual flavor — a step white tea leans on almost entirely, stretching it to one to three days.

Rolling and Oxidation: The Decisive Step

Rolling bruises or crushes the withered leaf, mixing its oxidative enzymes with its own juices; this is where oxidation truly begins. Catechins convert into theaflavin and thearubigin pigments that define color and body. Green tea halts this almost immediately through kill-green (steaming or pan-firing); yellow tea adds a sealed, gently warm 'sweltering' step instead; oolong stops partway, anywhere from roughly 8% to 85% depending on style; black tea oxidizes fully, 45 minutes to 3 hours at 20-30°C. Dark tea breaks the pattern altogether — after kill-green halts enzymatic oxidation, the leaf undergoes true microbial fermentation instead, either aged slowly for years (raw, sheng) or accelerated in weeks through wet-piling (ripe, shou), a method developed at the Kunming Tea Factory in 1973.

Drying, Grading, and Brewing

Drying locks in the leaf's final aroma compounds, and sorting separates whole-leaf grades (Orange Pekoe) from broken, fannings, and dust — a distinction that changes how long a tea needs to steep. Brewing brings four variables back together: water temperature, time, leaf-to-water ratio, and leaf size. Green tea generally wants 61-87°C for 30 seconds to 3 minutes, oolong 82-96°C for 1-5 minutes often across several short infusions, and black tea the hottest and longest of the three, 90-98°C for 3-5 minutes. The same leaf, brewed a few degrees or a few minutes off target, becomes a different cup.

Turkey's Link: Rize and the Çaydanlık

Turkish tea cultivation traces to failed 1888 trials in Bursa, then small-scale experiments in Rize from 1912, formalized by government research in 1918 that narrowed production to Rize, Artvin, and Ardahan. A state nursery distributed roughly 50,000 seedlings to Rize in 1924, and large-scale production stabilized only between 1939 and 1945. By 2019 Turkey was producing 1.45 million tonnes of tea, about 4% of world output, with the world's highest per-capita consumption; output fell to just over 500,000 tonnes by 2023 amid heat and irregular rainfall. The chain closes in the çaydanlık, the stacked double teapot where water boils below and a concentrated brew steeps above, letting each drinker dilute their own glass to taste.
