In fermentation, salt-water brine lets naturally occurring lactic acid bacteria convert the vegetable's own sugars into acid. Vinegar pickling skips the waiting period. Vegetables go straight into an already-acidic solution, so there is no bacterial fermentation to wait for. The result can be ready in hours rather than days.
The trade-off is flavor complexity: vinegar pickles taste sharply acidic and consistent, while fermented pickles develop a tangier, more layered flavor as fermentation progresses.

If you have time and want a deeper, tangier flavor, fermentation is the better route — it is a process built around patience. If you want a crisp, sharply acidic result within hours, vinegar pickling gets there faster.
Neither method is objectively better; the right one depends on how much time you have and the flavor profile you are after.
