Butter or Olive Oil?

Two Different Sources: Animal Fat Versus Fruit Oil

Butter starts as cream separated from milk, ripened for roughly twenty hours, then churned until the fat breaks away from the buttermilk. The result is about 80 percent milk fat, with water, lactose and protein making up the rest.

Olive oil skips that entire process. Ripe olives are crushed into a paste and pressed mechanically to separate the oil from the fruit's own water; there is no fermentation and no animal conversion involved. It is a fruit juice in the technical sense, and that origin sets every other difference in motion.

Fatty Acids Decide Texture

Olive oil is roughly 55 to 83 percent oleic acid, a monounsaturated fat that keeps it liquid at room temperature. Butter runs the opposite way: about 51 grams of every 100 grams is saturated fat, which is why it hardens in the fridge and still holds its shape on the counter.

That single difference in chemistry is why the two coat the mouth so differently — olive oil feels light and fluid, butter feels rounder and stays on the palate longer.

Plain butter benefits from the freezer too: wrapped tightly, it already keeps for months in the fridge, and freezing extends that further by slowing both microbial spoilage and light-driven rancidity. Olive oil gains nothing from the same trick — it stays liquid at room temperature thanks to its oleic acid content, so freezing adds no shelf-life advantage; keeping it away from light and heat is what matters.

Smoke Point Is Not a Fixed Number

Smoke point is the temperature at which a fat starts producing continuous blue smoke and breaking down into bitter, off-flavors. For olive oil, measured ranges swing from about 190°C to 243°C depending on refining, free acidity and how fresh the oil is — the "olive oil" label alone does not fix the number.

Unrefined butter smokes far earlier, around 150°C, but the cause is its water and milk proteins, not the fat itself. Strip those out and the same fat tolerates much higher heat. Smoke point also does not track oxidative stability, so it is not on its own a safety measure — only one factor among several.

How Each One Reacts to Heat

Butter in a hot pan does three things at once: water evaporates, milk fat melts, and milk solids brown — the source of butter's nutty smell, and also the point where it can burn if pushed too far. Olive oil, without water or protein, behaves more predictably across a wider heat range.

Fat as an Aroma Carrier

Most aroma compounds dissolve in fat, so the fat itself carries the smell of a dish. Olive oil's aroma comes straight from the fruit — grassy, fruity, sometimes peppery depending on the olive variety and harvest — while butter's comes from milk fat, turning nutty once it browns. The same herb tastes different in each because it is riding on a different carrier.

Why Pastry Needs a Solid Fat

Laminated dough — croissant, puff pastry — relies on butter staying solid yet pliable between layers of dough. As the pastry bakes, water in the butter turns to steam and pushes the layers apart while the fat itself crisps them from the inside. A liquid fat has no such structure: it simply soaks into the dough instead of separating it into layers.

The same solidity matters in creaming butter with sugar for cakes and cookies, trapping air that gives baked goods their light crumb — something a poured liquid oil cannot replicate on its own.

Two Traditions, One Climate Line

Along Turkey's Aegean, Marmara and Mediterranean coasts, where olive trees grow freely, olive oil is the primary cooking fat, especially in the cold vegetable dishes known as zeytinyağlılar. Inland, in Central Anatolia and the Black Sea region, butter dominates rice and pastry.

The split is not arbitrary — it follows agriculture. Olive trees need the Mediterranean's mild winters and dry summers, which is why olive oil traditions took hold across Italy, Greece and Spain, while the colder pastureland of Northern Europe favored dairy and butter instead.

Clarified Butter Removes the Weak Link

Clarified butter, or ghee once it is simmered further, is made by slowly melting butter and skimming off the water and milk solids that cause it to smoke early. What is left is closer to pure fat, with a smoke point that can climb to roughly 200°C for clarified butter and around 250°C for ghee, alongside a longer shelf life at room temperature.

Which One for Which Cooking Method

Frying and sustained high heat favor olive oil, or butter in its clarified form, since both hold their structure across a wide temperature band. Salads, cold vegetable dishes and finishing drizzles call for a fruitier extra virgin olive oil instead.

Croissants, puff pastry and creamed cake batters need butter's solid structure — no liquid oil can substitute. Pilaf and börek lean on butter for its nutty aroma, switching to clarified butter when the heat needs to climb higher. In practice, many kitchens use both together, pairing butter's flavor with olive oil's heat tolerance in the same pan.

Hamur işlerinde hangisinin tercih edileceğine dair somut bir kural (kurabiyede tereyağı, focaccia'da zeytinyağı gibi) verilseydi daha kullanışlı olurdu.

Tereyağının yaklaşık yüzde 80 süt yağı olduğunu bilmiyordum, oleik asit oranıyla zeytinyağı karşılaştırması çok işime yaradı.
