Why "Chef" Doesn't Actually Mean "Cook"
The word "chef" comes from French chef, meaning "head" or "chief," not "cook." In the kitchen, it is shorthand for chef de cuisine — "head of the kitchen." The French word traces back to Latin caput ("head"), the same root that gives English "chief." So the title has always described a position of authority rather than the act of cooking itself.
Chef, Cook, and the Kitchen Hierarchy
In English, "cook" is the general term for anyone who prepares food, while "chef" traditionally marks a rank within a professional kitchen. That rank system runs from the chef de cuisine (head chef, in charge of the whole kitchen) to the sous-chef (second-in-command), the chef de partie (station chef, responsible for one area such as sauces or grill), and the commis (a junior chef still learning a station). Each title describes a job, not a skill level on its own.
A Parallel Tradition: Ottoman Kitchen Titles
Turkish cuisine had its own hierarchical kitchen tradition, independent of the French system. In the Ottoman palace kitchen, an aşçıbaşı ("head cook") supervised each kitchen section, with kalfa (journeymen) and apprentices working under them. Today the term is generally rendered in Turkish as "mutfak şefi" — the two separate traditions now describe the same role.
The Toque: What's Verified and What's Legend
The white double-breasted jacket signals cleanliness and protects against heat and spills; it can also be reversed to hide stains. The tall, pleated toque took its familiar shape in the 19th century, and its height has been linked to rank in some kitchens. A popular story claims that each pleat represents a technique or dish the chef has mastered — but this claim rests on weak sourcing, and even the English Wikipedia article flags its cited source as unreliable. Treat it as kitchen folklore, not a verified fact.
