The Short Answer: It Comes Down to the Edge Curve
Look at a chef's knife from the side and the edge curves continuously from heel to tip; look at a santoku the same way and that curve almost disappears into a nearly straight line. That single difference explains almost everything else: a curved edge is built for rocking the blade back and forth without lifting it off the board, while a flat edge is built for lifting the blade and bringing it straight down in a single push cut.
If you rock the blade through most of your chopping, a chef's knife will feel more natural. If you lift and drop the blade with each cut, a santoku will feel more natural. Everything else — tip shape, length, edge angle, steel — follows from that one distinction.
How the Curve Shapes the Cutting Motion
A Western chef's knife keeps its tip anchored on the board as a pivot point, letting the handle rise and fall while the curved edge rolls through the food — the classic rocking cut. French-style blades carry more of that curve near the heel; German-style blades spread it more evenly along the whole edge, but both support the same rolling motion.
A santoku's mostly flat edge doesn't roll the same way, so it relies on a straight downward push cut instead. That's why the same vegetable can feel like two different tasks depending on which knife is in your hand.
Tip Shape: Pointed vs. Sheepsfoot
A chef's knife tapers to a fine point above the spine — useful as a pivot for rocking and for piercing or scoring. A santoku ends in a sheepsfoot tip instead, with the spine curving down at roughly 60 degrees into a low, blunt point rather than a sharp one.
That blunt tip lowers the risk of an accidental stab when you're bringing the blade straight down, but it isn't built for piercing or fine detail work the way a chef's knife's point is.
Why Each Knife Ended Up This Shape
The santoku emerged in the 1940s as a single all-purpose blade meant to replace three specialized Japanese knives — deba for fish, gyuto for meat, nakiri for vegetables — in the home kitchen, which is part of why its edge is flat and balanced rather than built for one narrow technique. The Western chef's knife, by contrast, had already developed as a general-purpose tool within its own tradition; the gyuto used in Japanese kitchens today is itself a Western-style blade adapted with Japanese steel and craftsmanship.
The two also distribute thickness differently: Western blades usually thicken noticeably toward the heel, while Japanese blades tend to stay close to the same thickness along their length. That's part of why a chef's knife can feel heavier and more heel-weighted, while a santoku feels evenly balanced from spine to edge.
Length and Edge Angle
The most common Western chef's knife blade runs about 20 cm (8 in), with most models falling between 15 and 25 cm. Santoku blades typically run 13 to 20 cm — often a couple of centimeters shorter, which makes the knife feel lighter and easier to maneuver on a smaller board or in a smaller hand.
Western blades are usually sharpened at a wider 20-22 degree edge angle on softer steel, while East Asian blades, santoku included, traditionally take a narrower 15-18 degree angle on harder steel. Quality knife steel generally falls in the HRC 55-66 hardness range; the harder end of that range can hold a thinner edge but chips more easily under lateral stress.
The Granton Edge, and Which Knife Fits Which Cook
Many santoku blades carry granton dimples — shallow oval indentations along the edge that create small air pockets, keeping thin slices of vegetables from sticking to the blade. Chef's knives rarely need this feature, since a rocking cut never presses food against a wide flat section of the blade the way a push cut does.
A cook who rocks the blade through most chopping, works with a larger hand, or wants a point for piercing tends to reach for a chef's knife. A cook who prefers a lighter, shorter blade, lifts and drops with each cut, or wants a bit more margin against accidental stabs tends to reach for a santoku. Both are general-purpose knives, and the choice mostly comes down to which motion already feels natural at the cutting board.
