6 Local Products That Define Samsun's Cuisine

Two Black Sea Food Cultures

Samsun sits at the northernmost point of Turkey's Central Black Sea region, and its food culture runs on grain, dough, and poultry rather than the anchovy-and-highland-dairy tradition associated with the Eastern Black Sea coast around Trabzon and Rize.

The six items below are all listed in Turkey's Patent and Trademark Office (TÜRKPATENT) geographical indication registry, each tied to a written production specification.

1. Bafra Pidesi (Bafra Flatbread)

Registered in 2009, Bafra Pidesi is a closed flatbread with butter tucked inside the dough rather than brushed on top. One serving weighs about 230 grams and measures 70-75 cm long by 3-4 cm wide.

It bakes in a special stone-lined oven at 270°C for 18-20 minutes, leaving the dough thin enough to flake apart like baklava when eaten. The registered specification even names the local wheat blend used.

2. Terme Pidesi

Terme Pidesi, registered in 2010, is open-faced rather than closed and considerably wider than Bafra's version — about 15 cm across and 70-80 cm long per serving. It bakes over oak-wood fire in a stone oven and is typically served whole, with fillings ranging from minced meat to kashar cheese, cured beef, and sausage.

3. Bafra Nokulu

Bafra Nokulu is a syrup-free pastry, registered in 2017, made by rolling yeasted dough around walnuts, golden raisins, and sugar. What sets it apart from similar Turkish pastries is what it leaves out — no baking powder, no egg — while vinegar in the dough gives it a distinctive crispness. It's traditionally served in a woven basket called a 'Bafra zembili,' made from reed grass native to the Kızılırmak river delta.

4. Samsun Kaz Tiridi (Samsun Goose Tirit)

Samsun Kaz Tiridi is a winter dish from five inland districts — Havza, Ladik, Kavak, Asarcık, and Vezirköprü — built around roast goose, bulgur pilaf, and thin flatbread soaked in the fat that drips from the bird as it roasts on a hook over an open hearth. Preparation takes roughly three to three-and-a-half hours.

5. Çarşamba Keşkeği

Registered in 2023, Çarşamba Keşkeği is a wheat-and-chicken porridge from the inland district of Çarşamba, unrelated to the anchovy dishes of Turkey's eastern Black Sea coast. Soaked cracked wheat and boiled chicken are pounded together with a long wooden mallet — a technique the registration calls 'güdelleme' — until the mixture reaches a smooth, pale porridge consistency.

6. Yakakent Mantısı

Yakakent Mantısı is a coastal-district dumpling, registered in 2017, folded into a distinctive triangular pouch rather than the tiny parcels typical elsewhere in Turkey. It's served two ways: tossed in garlic yogurt, or drizzled with melted butter and topped with crushed walnuts.

The Common Thread: A Written Standard

Five of these six products were registered by municipalities or trade chambers, one by a private business — but all of them answer to a TÜRKPATENT specification that spells out ingredients and method down to the gram, a stronger claim than a generic 'local delicacy' label.
