Two Different Jobs
Marinating and brining both mean soaking meat in a liquid before cooking, which is why they get treated as interchangeable. They are not: marinating uses acid, oil and aromatics to build flavor on the surface, while brining uses salt to change how much moisture the meat holds onto once it hits the heat.
The active ingredient tells you what each one actually does. Acid and oil drive a marinade; salt drives a brine.
How Marinating Works
A marinade combines an acidic liquid -vinegar, citrus juice, yogurt- with oil and aromatics like garlic, thyme or rosemary. The acid loosens the tissue structure at the meat's surface, which lets more moisture and flavor get absorbed, while the oil carries fat-soluble aroma compounds into the mix.
Marinating is built for flavor, not bulk moisture. Because only a limited amount of salt or liquid actually reaches the interior, a marinade never matches a brine's moisture-holding effect.
Where the Word Comes From, and Enzyme Marinades
The word marinade traces back to the French verb mariner, which itself comes from the Latin mare, meaning sea; the term grew out of an old practice of soaking fish or meat in seawater to preserve it. Modern marinating is about flavor rather than preservation, but the word's origin still points at how close the two techniques once were.
Some marinades rely on enzymes instead of, or alongside, acid: pineapple, kiwi, papaya and ginger all contain enzymes that break down muscle protein through a different pathway than acid does. Enzyme marinades act faster and more aggressively, so leaving meat in one too long turns the outer layer mushy faster than an acid-based marinade would.
How Brining Works: Salt and Protein Structure
A brine works through a different mechanism entirely. Because the meat starts out less salty than the surrounding solution, salt ions diffuse inward toward the meat, and that movement pulls water in along with it through osmosis.
Salt also denatures the muscle proteins, myosin in particular. As those proteins unfold and coagulate, they form a network that traps water molecules, which is what lets brined meat hold onto more moisture through cooking. Unlike a marinade, a brine's effect is not confined to the surface; diffusion keeps working its way inward over time.
Wet Brine vs. Dry Brine
In a wet brine, meat goes straight into a salt-water solution, absorbing both salt and outside water, which usually means the cooked weight goes up. In a dry brine, salt is rubbed directly onto the meat; it first pulls the meat's own moisture to the surface, then that salty liquid gets reabsorbed over time.
Because a dry brine never adds outside water, it leaves a more concentrated flavor and dilutes the meat's natural texture less. A wet brine makes more sense for large, lean cuts prone to drying out, a whole turkey being the classic case.
Timing a Brine to the Cut
Brine time is not a fixed number; depending on thickness, size and the effect you want, it can run anywhere from thirty minutes to several days. That range exists because diffusion takes time -salt reaches the center of a cut later than it reaches the surface- so a large, thick piece like a whole turkey needs far longer than a small one.
Brining should not be confused with curing: curing runs much longer and involves significantly drying the food out, which makes it a separate technique and a separate topic from brining.
How Deep Does a Marinade Actually Go?
A common myth is that leaving meat in a marinade longer carries its effect all the way to the center. In reality, a marinade's effect stays concentrated at and just beneath the surface; extending the time does not extend how far the acid reaches in any meaningful way.
Freezing marinated raw meat makes this visible: only the outer layer goes soft and mushy on thawing, while the interior is unaffected. That is a fair sign that a marinade's job is building a surface layer of flavor and texture, not reaching the meat's core.
Why Long Acid Exposure Breaks Texture Down
Acid gets to the same endpoint as heat -denaturation- through a different route: heat breaks intermolecular bonds directly, while acid shifts the hydrogen-ion balance around the protein and breaks its hydrogen bonds instead. That is why raw fish left in citrus juice turns opaque and firm, looking cooked on the surface.
That appearance is not a substitute for actual cooking; acid marination does not neutralize pathogens the way heat does. The same logic applies to red meat: marinated raw meat is not safe to eat until it is actually cooked. Marinating for too long also over-softens the tissue, the muscle fibers break apart, and the result turns mushy rather than tender.
Food Safety: Refrigeration and Cross-Contamination
Both techniques involve raw meat, so both belong in the refrigerator, not on the counter; leaving raw meat at room temperature for extended periods raises the risk of bacterial growth, and that rule applies equally to marinating and brining. Even for a long brine, the container needs to stay cold the whole time.
Because marinade liquid has been in contact with raw meat, it needs to be boiled before it is reused as a sauce; serving raw marinade liquid straight from the bag or bowl is a cross-contamination risk.

Which Cuts Suit Which Method
Large, lean cuts prone to drying out -turkey breast, chicken breast, lean pork chops- gain the most from brining, since salt's moisture-holding effect keeps them juicier through cooking. Fattier cuts that cook fast over high heat -steak, lamb chops, chicken thighs- lean more on the surface flavor a marinade provides.
Seafood needs care either way: its texture is delicate, so both salt and acid act fast, and over-soaking breaks it down quickly. Vegetables and fermented pickles are a separate subject; this comparison covers meat and poultry only.
So Which One, and When
If the problem is dryness -a large, lean cut at risk of cooking out- brining gets the more reliable result. If the problem is flavor -something grilled or quick-cooked that needs a distinct surface taste- marinating is the better fit.
The two can be stacked: a short, light brine followed by a lower-salt marinade. Just account for the total salt from both steps, or the meat ends up over-salted.
