Mezze: A Table Built Around Sharing, Not a Main Course

Order a meal in Lebanon and there's rarely a single centerpiece dish. Instead, small plates arrive together and get shared across the table — this is mezze, a way of eating rather than one recipe. Hummus, tabbouleh, mutabbal and kibbeh can all land at once, meant to be scooped up with bread. In many households a mezze spread is a full meal in itself, not a warm-up act.

Tabbouleh: A Parsley Salad That Happens to Contain Bulgur

The defining ratio in tabbouleh runs opposite to what most people expect: parsley dominates, bulgur is the minor player. Lebanese and Syrian versions lean heavily on finely chopped parsley with tomato, mint and onion, dressed in olive oil and lemon; Western adaptations tend to reverse that ratio and add far more bulgur. Turkey's kısır sits at the bulgur-heavy end of the same family.

Hummus: Chickpeas and Tahini, Nothing to Hide Behind

Hummus comes down to cooked chickpeas blended smooth with tahini, lemon and garlic, finished with olive oil, whole chickpeas, parsley and paprika. The earliest known written recipe resembling it appears in a 13th-century cookbook attributed to the historian Ibn al-Adim of Aleppo — though that version skips garlic entirely, a reminder that the dish took centuries to settle into its familiar form.

Mutabbal and Baba Ghanoush: Two Takes on Smoked Eggplant

Both start the same way: eggplant charred over open flame or in the oven until the skin blackens and the flesh turns soft and smoky, then mashed with olive oil and lemon. The split between them mostly comes down to tahini — mutabbal is built around it, while baba ghanoush doesn't always include it. Either way, it plays a cooling, soft-textured role against crunchier mezze items.

Kibbeh: One Bulgur-and-Meat Base, Raw or Cooked

Kibbeh starts as lean ground meat pounded together with soaked bulgur into a fine paste, then shaped into torpedo-like shells stuffed with pine nuts and spiced meat and fried — or layered in a tray and baked, or grilled. There's also a raw version, kibbeh nayyeh, finely minced meat mixed with bulgur and served like a tartare with mint and olive oil. National Geographic lists it as a national dish shared by both Lebanon and Syria, not claimed by one alone.

Manakish: The Za'atar Flatbread That Starts the Day

Manakish is a thin dough topped with za'atar — dried thyme, toasted sesame, salt and sumac worked into olive oil — or cheese, baked on a griddle or in a clay oven. UNESCO added it to its Intangible Cultural Heritage list in 2023 as a Lebanese culinary practice, noting that its smell evokes sobhhiyé, the traditional morning social gatherings it's tied to.

Fattoush: Toasted Bread Meets Sumac

Fattoush cuts its vegetables in noticeably larger pieces than tabbouleh, then adds toasted or fried pita and a hit of sumac for tartness, sometimes backed up with pomegranate molasses. It belongs to the fattat family of dishes built to use up stale bread, a lineage traceable to a 10th-century Baghdad cookbook. On a Lebanese mezze table, it's the lighter counterweight to richer dips like mutabbal.

How a Mezze Table Actually Unfolds

Mezze isn't served all at once — dishes typically arrive in waves of four or five, five to ten rounds in total. The order follows a rough logic: cold, olive-oil-and-yogurt-based dishes like hummus, tabbouleh and mutabbal first, then vegetable and egg dishes, then small meat or fish plates, and finally heartier grills or stews. No one is expected to finish every plate — it's a shared, unhurried pace, and the six dishes above usually open the meal rather than close it.

Manakışın üzerine zahter mi peynir mi serildiğine göre ayrıldığını, kibbeh'in ise pirinç değil bulgur-et harcıyla yapıldığını öğrenmek işime yaradı.

Tabbouleh'nin asıl malzemesinin bulgur değil maydanoz olduğunu hiç bilmiyordum, evde hep tersini yapıyordum.
