How to Choose and Store Morel Mushrooms

Morels (Morchella) are wild mushrooms known for their honeycomb-patterned cap, and their season is brief — reported to run roughly from February to July depending on the region, with peak fruiting in early spring. Because the window is short, knowing what a fresh specimen looks like matters at the point of purchase.

Morels are best bought from a market or a trusted seller; confidently identifying a self-gathered mushroom requires expertise and is outside the scope of this guide. The checks below are for judging freshness and quality once a morel is already in hand.

What to Look For in a Fresh Morel

The honeycomb cap is the first thing to check: the pits should look plump and slightly moist, not shriveled, dried out, or blackened. A slimy, sticky surface is a sign of spoilage rather than freshness.

The stem should feel firm and springy when pressed gently, not brittle or mushy. A morel that feels lighter than its size suggests has likely already lost moisture and started to dry out, even if it still looks fine from the outside.

Why a Hollow Interior Matters

A true morel is completely hollow from cap to stem when sliced lengthwise. This isn't just a visual trait — it's one of the main ways morels are told apart from dangerous look-alikes. False morels (Gyromitra esculenta) are chambered or cottony inside rather than hollow, yet can superficially resemble true morels; a specimen that isn't hollow inside should not be treated as a morel or eaten. Cap attachment is a second clue: in true morels the cap fuses to the stem down near its base, while in false morels and in the similar genus Verpa the cap typically hangs free from just the top of the stem.

Dried morels are stored whole or sliced in a dry, ventilated spot; drying is said to concentrate their flavor, and one traditional method is threading the caps onto string and hanging them to dry. Before use, dried morels are soaked in warm water until softened again — and that soaking liquid is kept, not discarded, since it carries the mushroom's concentrated aroma and is strained into sauces, soups, or rice dishes.
