Why Fermentation Sits at the Center of Korean Cooking
Korean cuisine is hard to sum up through a single dish, because what actually holds it together is a shared technique rather than a specific recipe: fermentation. From kimchi to the soybean pastes that season nearly every stew, a large share of the Korean table depends on ingredients that are deliberately left to change over time.
That technique was never just about flavor. Long, cold winters on the Korean Peninsula made fermentation a practical way to keep vegetables and legumes edible for months. Over generations, that necessity turned into a defined food culture rather than a mere preservation trick.
Two branches of that culture are recognized separately by UNESCO: kimjang, the seasonal, communal kimchi-making tradition, and jang, the family of fermented soybean sauces that includes doenjang, ganjang, and gochujang. Both listings treat the practices as living cultural knowledge, not just cooking methods.
Jang: One Fermented Soybean Block, Three Different Sauces
Jang is the umbrella term for Korea's foundational fermented sauces, and all three trace back to the same starting point: meju, blocks of boiled soybeans that are dried and left to ferment.
Once meju blocks are soaked in brine and left to sit, the mixture is separated. The liquid that's strained off and aged becomes ganjang, Korean soy sauce. The solid paste left behind, fermented further, becomes doenjang, a savory soybean paste. Gochujang is a separate preparation built on that same base, blended with red chili powder, grain flour, and salt.
The three aren't interchangeable — ganjang is sharp and salty, doenjang is deep and earthy, and gochujang carries a sweet-heated intensity. Because fermentation time, salt ratio, and conditions vary from household to household, jang has traditionally been treated as a sauce with a family signature.
In everyday cooking, the three take on distinct jobs. Doenjang forms the base of a soybean paste stew; gochujang adds heat and body to a rice-and-vegetable bowl or a marinade; ganjang brings a fine salt-umami balance to meat or vegetable marinades. That three sauces built from the same base end up doing such different work is what turns jang from a single condiment into a coordinated family of sauces.
The Mechanics Behind It: Salt, Time, and Microorganisms
Kimchi and jang share the same underlying biology. Salting vegetables or soybeans draws water out of the cells, creating a salty, low-oxygen environment. Lactic acid bacteria that occur naturally on the vegetable surface thrive in exactly that kind of setting.
Those bacteria convert sugars in the food into lactic acid. The resulting drop in pH makes it harder for spoilage organisms to take hold and gives kimchi its characteristic sourness. Temperature and time shape the outcome directly — a warmer, longer ferment turns more sour, while a slow, cold ferment produces a milder result.
Jang works on the same principle, just on a slower timeline. Microorganisms and enzymes in meju break down soybean proteins over months, building both the sauce's pungent aroma and its deep, umami-heavy flavor. A high salt concentration is what keeps unwanted microorganisms in check over that extended fermentation period.
Kimjang: A Communal Ritual Behind Everyday Kimchi
Kimchi is a fermented preparation of salted vegetables — most commonly napa cabbage — mixed with red chili powder, garlic, ginger, and often fermented seafood, then left to ferment. Because the mix of ingredients and fermentation time shifts by region and by family, kimchi is less a single recipe than a method.
Much of that regional shift comes down to climate. In the Chungcheong region, kimchi is typically seasoned mostly with salt and only a light touch of red chili powder. In the warmer Jeolla region, it leans on generous chili powder and salted seafood — the extra salt there keeps the kimchi from turning too sour in the heat. On Jeju Island, with its milder island climate, kimchi tends to use less chili powder for a lighter, fresher result. That range is a reminder that kimchi isn't a fixed recipe so much as a method that bends to climate.
Kimjang is the name for making that kimchi collectively and seasonally. In late autumn, households prepare enough kimchi to last through winter, often with neighbors and extended family taking part and sharing the results. In 2013, UNESCO inscribed "Kimjang, Making and Sharing Kimchi in the Republic of Korea" on its Representative List of the Intangible Cultural Heritage of Humanity, describing it as a practice that reinforces family cooperation as much as it produces food.
UNESCO Recognition and the Historical Roots of Jang
Jang-making earned its own UNESCO listing in 2024, under the title "Knowledge, Beliefs and Practices Related to Jang-Making in the Republic of Korea." The inscription covers the entire process — preparing soybeans, drying and fermenting meju, and aging the finished sauces under the right conditions.
Jang-making is believed to date back to Korea's Three Kingdoms period (57 BCE–668 CE) and to have continued through the Joseon dynasty (1392–1910). According to Korea's official Korea.net news service, Joseon officials responsible for storing the royal court's jang reportedly outranked those in charge of the royal kitchen — a detail often cited as evidence of how seriously jang was treated at court.
Onggi: The Clay Pots That Let Fermentation Breathe
Both kimchi and jang are traditionally aged in onggi, porous earthenware jars fired from unglazed clay. The walls aren't fully sealed — microscopic gaps let air and moisture pass through in limited amounts.
That controlled porosity shapes how fermentation unfolds, from the crispness of kimchi to the depth of doenjang. Onggi jars are traditionally kept outdoors, on terraces or in courtyards, exposed to sun and wind — a placement that treats fermentation as an ongoing, living process rather than something sealed away and forgotten.
Where Fermentation Sits on the Korean Table
A typical Korean meal is built around rice, a soup or stew, and a set of small side dishes called banchan. Kimchi shows up in nearly every meal as one of those banchan, while doenjang and gochujang form the flavor base for soups, stews, and marinades.
That structure makes fermented ingredients closer to the skeleton of a Korean meal than a garnish on top of it. Which jang goes into a dish, or which kimchi lands on the table, shapes the character of the meal the way a base sauce or spice blend might in another cuisine.
Reading Korean food only through dish names misses that relationship. Fermentation ties ingredients to time, patience, and shared labor — and that link is what actually sets the cuisine apart.
