Why Is Boza a Winter Drink in Turkey?

A Seasonal Drink by Necessity

Boza is a fermented grain beverage that spoils quickly, and for most of its history that fact alone dictated when it could be sold. Cold weather slowed the souring that would otherwise ruin it within days, so producers in Ottoman-era Istanbul traditionally sold it only between mid-September and mid-May.

Street vendors built a seasonal ritual around this constraint, and freshly made boza was historically served warm in the evenings, which suited cold weather. Refrigeration has since loosened the technical constraint, but the seasonal association has stuck.

What Boza Is

Boza is a thick, mildly sour-sweet beverage made by cooking and fermenting grain — traditionally millet in Turkey, though corn, wheat, or rice are used elsewhere. A Turkish national standard, TS 9778, defines it by minimum dry-matter and sugar content and caps its alcohol content.

The Fermentation Behind the Texture

Two fermentation processes run in parallel: yeast converts sugar into a small amount of alcohol and carbon dioxide, which builds body, while lactic acid bacteria acidify the mixture, producing its tang and helping preserve it. Turkish-made boza typically measures around 1% alcohol by volume, under the standard's 2% cap — a low but real by-product of fermentation, not an additive.

Serving

Boza is typically served in a glass, dusted with cinnamon and paired with roasted chickpeas known as leblebi — a pairing carried over largely unchanged from street-cart sales to today's cafés and supermarkets.
