What Makes a Pepper Hot: Capsaicin and the Scoville Scale
The heat in a dried red pepper is not stored in the flesh but in the whitish placenta that holds the seeds, where capsaicin concentrates most heavily. Capsaicin is a non-toxic but potent plant compound that irritates mammalian nerve endings, sending a burning signal to the brain; the seeds themselves produce none of it, though they are often blamed for the heat.
Pharmacist Wilbur Scoville devised a way to quantify this in 1912, diluting pepper extract in sugar water until a trained panel could no longer detect any heat. Modern labs now use HPLC analysis to measure capsaicinoid content directly and convert it into Scoville Heat Units.
Either method produces a range, not a fixed number — soil, climate, harvest timing and seed genetics all shift a variety's heat, and even lab-to-lab results can differ by as much as 50 percent. Every Scoville figure below should be read as a reported range rather than a precise measurement.
Turkey's Regional Signatures: Maraş and Urfa
Turkey's two best-known dried pepper varieties come from opposite ends of the drying spectrum. Maraş pepper, grown around Kahramanmaraş, is prized for its aroma, vitamin C content and moderate heat, produced through drying methods refined with university and research-institute involvement rather than open, uncontrolled sun-drying.
Urfa pepper — sold internationally as isot — undergoes a two-stage process: pods are sun-dried by day and wrapped tightly by night to "sweat," a step that darkens them toward deep purple-black and concentrates a smoky character that comes from slow caramelization, not actual smoke. Reported heat sits near 7,500 Scoville units, with tannic notes recalling wine, tobacco or chocolate. It carries official geographic indication protection in Turkey under the name Urfa isot biberi.
Aleppo Pepper: The Flakes Behind Turkish Pul Biber
What Western kitchens call Aleppo pepper is the same product Turkish cooks know as pul biber, or Antep pepper: pods ripened to burgundy, semi-dried, deseeded and coarsely crushed. Named for the Syrian city on the old Silk Road trade route, it is grown across both Syria and Turkey.
At roughly 10,000 Scoville units, it lands at a moderate heat with a fruity, almost raisin-like sweetness and mild cumin-like undertones — closer to an ancho chile in profile, but oilier and lightly salty, which is why it sticks to flatbreads and roasted vegetables so well.
True Smoke: Chipotle and Pimentón de la Vera
Where Turkish tradition relies on sun and sweat, some global pepper traditions use actual wood smoke. Mexico's chipotle — Nahuatl for "smoked pepper" — is made from ripened red jalapeños smoked over walnut wood for about six days at 65-75°C, dropping moisture from roughly 88 percent to 6 percent; it takes ten pounds of fresh jalapeño to yield one pound of chipotle, landing between 2,500 and 8,000 Scoville units.
Spain's pimentón follows a similar logic in La Vera, Extremadura, where pods are smoked over oak before grinding, producing a deep, earthy heat sold as dulce, agridulce or picante. Murcia's version, by contrast, is sun- or kiln-dried without smoke. Pimentón de la Vera holds Protected Designation of Origin status, with roughly 1,500 hectares under cultivation and 4.5 million kilograms certified annually.
Hungarian Paprika and the Sweet-vs-Hot Divide
Hungary's paprika industry, centered on Szeged and Kalocsa, grew from late-17th-century origins into full industrial production by the 18th century. Sweet paprika comes mostly from the deseeded flesh of the fruit, while hot paprika retains seed, stem and placenta fragments that carry most of the capsaicin — the same distinction that separates any sweet ground pepper from its hot counterpart, wherever it is made.
Storage and the Sudan Dye Warning
Light, moisture and heat are the shared enemies of every dried pepper product; an airtight container kept cool and dark preserves color and aroma far longer than an open jar on a sunlit shelf. There is also a documented adulteration risk worth knowing: Sudan I, an industrial dye once used to redden cheap chili and curry powders, was traced to a 2005 contamination case in UK-made Worcestershire sauce and is now banned after being classified a Category 3 carcinogen. Buying single-ingredient product with a clear label is the simplest safeguard.
