Check the Roast Date, Not the Best-By Date

The single most useful thing to check on a coffee bag is the roast date, not a generic best-by date. Freshly roasted coffee keeps releasing carbon dioxide for days, and that degassing curve is the real measure of how fresh a bag still is. If a bag carries no roast date at all, treat that as a warning sign on its own.

Roasted whole beans are generally considered at their best within roughly two weeks of roasting, after which flavor starts to fade. Beans meant for vacuum-sealed packaging even need several days to de-gas before they can be sealed, since built-up CO2 can otherwise distort the bag or the taste.

Packaging: Why the One-Way Valve Matters

Because roasted coffee keeps emitting CO2, packaging has to let that gas escape without letting oxygen back in. That is exactly what a one-way valve on a foil-lined bag does, and it lets a roaster seal a bag right away instead of waiting days for the beans to finish de-gassing.

A clear plastic bag cannot do this. Beans exposed to light and oxygen lose freshness far faster than beans kept in an opaque, valve-sealed bag, so checking for light-proof, airtight, valved packaging matters just as much as checking the roast date.

What a Transparent Label Should Tell You

A trustworthy bag lists origin, variety, processing method, roast level, and ideally tasting notes. When that information is missing, that gap is itself useful information about the roaster.

The processing method shapes the final cup. In washed processing, the fruit is removed before the seeds are dried and the beans ferment in water for 8 to 36 hours. In natural processing, the oldest method, the whole cherry dries in the sun, a stage that can take up to four weeks. Honey processing sits in between, combining partial fermentation with mechanical removal of the fruit.

Roast Level and Flavor: What Changes Along the Way

Roast level does more than set a color; it decides which flavors dominate the cup. Beans crack audibly at roughly 196°C, marking the start of a light roast, and again at roughly 224°C, after which the roast keeps darkening.

Lighter roasts preserve more of a bean's origin character, while darker roasts let the roasting process itself take over the flavor. For a buyer who cares about origin and variety, roast level is as much about which flavor layer comes forward as it is about intensity.

Whole Bean or Pre-Ground?

Ground coffee exposes far more surface area to air than whole beans, which speeds up staling considerably. Whole roasted beans hold their peak freshness for roughly two weeks, while ground coffee's window is measured in minutes rather than days, which is why grinding right before brewing makes such a difference.

If you do buy pre-ground coffee, match the grind size to your actual brew method; the wrong grind undercuts even a well-roasted, well-stored bag.

Match the Grind to Your Brew Method

Grind size needs to match your brewing method. Espresso calls for a fine grind, French press almost always calls for a coarse one, and drip or filter coffee's strength depends on balancing the water-to-coffee ratio with grind fineness.

Turkish coffee needs the finest grind of all, close to a powder, with a particle size around 75 to 125 microns, a level most standard grinders cannot reach. A bag labeled "all-purpose grind" is unlikely to be fine enough for it.

Storage That Actually Works

Keeping roasted coffee fresh means protecting it from heat, oxygen, and light. The standard approach is an airtight container kept at room temperature, away from light, with beans portioned out so the main stash is not opened every day.

Refrigeration and freezing are noted to slow staling, though precise timeframes for that are not firmly established, so it is safer to rely on the general principle that a cool environment extends freshness rather than a specific number of days. Ground coffee is best used right away.
