The One Rule: Muscle Use Determines Toughness

Grill it fast or braise it for hours? The answer starts with how much work a muscle performed in the live animal. Muscles that constantly support the back and stay in near-permanent motion build up dense connective tissue; muscles that barely move stay lean and naturally tender.

Hardworking cuts — shoulder, leg, shank, brisket — need long, low, moist heat. Muscles that do little work, mostly along the back and loin, are best served by quick, high-heat cooking. Push either one the wrong way and the result disappoints.

Collagen: Why Long, Slow Heat Works

Connective tissue is built mostly from collagen, a protein that starts out tough and rubbery. Given enough heat and moisture over time, collagen breaks down into gelatin — the same transformation used to set desserts. That conversion is slow: a covered pot at low heat gives collagen time to melt into the meat's own juices, while a quick blast of high heat only tightens the protein and drives out moisture.

Lean cuts don't have this problem to solve — there is little collagen to convert in the first place, so long cooking just dries them out.

Ribeye, Tenderloin, Strip Loin: The Back's Least-Worked Muscles

Running along the spine, what Turkish menus list as antrikot (ribeye), bonfile (tenderloin) and kontrfile (strip loin) come from muscles that support the back but rarely bear real load. Ribeye keeps some marbling from the low, constant work of stabilizing the spine; tenderloin, tucked against the underside of the backbone, does almost nothing at all.

With little collagen to convert, these cuts reward short, hot cooking — grilling, pan-searing, quick sautéing — rather than time in a pot.

Shank and Brisket: Built for the Slow Pot

The shank wraps around the shin bone and carries the animal's weight with every step, which makes it one of the toughest cuts on the animal — traditionally braised whole for lamb, or cross-cut for dishes like osso buco with veal. Brisket, cut from the lower chest, carries the same kind of dense connective tissue and only turns tender after hours of low, moist heat — the same principle behind smoked barbecue brisket and Turkish haşlama alike.

Short ribs, sitting close to the brisket on the animal, follow the same logic, even though a rib roast cut higher on the back shares its tender muscle with ribeye and takes to dry roasting instead.

Round, Chops and Ground Beef: Where the Rule Gets Flexible

The round — Turkey's but — comes from the back leg and sits in between: lean, moderately tough, and low in marbling. It works best either moist and slow, or sliced thin off a quick roast left rare; a long stretch of dry heat dries it out without ever fully tenderizing it.

Chops (pirzola) sit near the spine like ribeye and get the same fast, hot treatment. Ground beef sidesteps the question altogether — grinding physically breaks down connective tissue, so tougher trim from the shoulder or round turns tender the moment it's shaped into a patty or kofte, no slow cooking required.

Fat, Bone and Slicing Direction Matter Too

Marbling acts as insurance: fat rendering through a cut like ribeye keeps it forgiving over a wider cooking window, while lean cuts like tenderloin or round have no such buffer. Bone slows heat transfer and shields meat from direct contact with a hot pan, part of why rib roasts and chops are often cooked bone-in.

One last variable sits outside the muscle itself: how it's sliced. Cutting across the grain, rather than along it, shortens the fibers a knife has to work through — it makes a real difference on cuts like round or brisket, even after the cooking method has already done its job.
