What Tempering Actually Controls
Cocoa butter is a polymorphic fat: depending on the temperature it solidifies at, it settles into one of six different crystal structures. Only one of them, Form V, also called the beta crystal, gives chocolate its glossy finish, clean snap, and resistance to surface streaking over time; the other forms melt too fast and set dull and soft.
Tempering is the three-stage process of melting the chocolate completely, cooling it under agitation to seed stable Form V crystals, then gently rewarming it to a narrow working range where only those crystals stay solid.
Why the Target Temperature Shifts by Type
Dark, milk, and white chocolate aren't tempered to the same numbers, because the milk fat and milk solids in milk and white chocolate change how the fat crystallizes. Callebaut's published technical chart, for example, cools all three to around 27°C (81°F) before rewarming: dark chocolate to roughly 31-32°C, milk chocolate to 29-30°C, and white chocolate to 28-29°C.
Different manufacturers and methods publish figures that differ by a couple of degrees, so treat any single number as a starting point and check the technical sheet for the chocolate actually in use.
Tabling, Seeding, and the Water Bath
Tabling spreads most of the melted chocolate across a marble or granite slab and works it with a spatula until it thickens; the stone pulls heat away fast, and the constant motion blocks unstable crystals from forming. The cooled paste is then stirred back into the rest of the batch to seed it.
Seeding skips the slab: solid pieces of already-tempered chocolate, roughly a quarter of the batch by weight, are stirred into the melted chocolate, where their existing Form V crystals trigger the same transformation. The water-bath method applies the same logic with a bowl moved between a warm water bath to melt and an ice-water bath to cool, stirred continuously throughout, then returned to gentle warmth for the final rewarm.
Confirming the Temper Held
Dip a knife tip, spoon, or spatula into the chocolate and let it sit at cool room temperature. Properly tempered chocolate sets within three to five minutes into a glossy, even surface that releases cleanly from a finger touch; streaking, spotting, or a soft, tacky set means the cooling and seeding step needs to be repeated before committing a full batch.
Bloom: The White Film That Isn't Spoilage
A dull white or grey film on chocolate is usually one of two things. Fat bloom forms when warm storage softens the cocoa butter, letting it separate and resolidify on the surface as grey streaks, a sign of either poor tempering or temperature swings during storage. Sugar bloom is unrelated to tempering: moisture dissolves surface sugar, and once it evaporates the sugar recrystallizes as a dry, grainy white coating. Both change the look and texture of the chocolate but not its safety to eat.
