What Is Aperitivo Hour?

Aperitivo is a pre-dinner social ritual in Italy: a light drink paired with small bites, taken in the hours before the evening meal. It is not a meal in itself, but a way of gathering before one.

It typically runs through the early evening, filling the gap between the end of the workday and Italy's characteristically late dinner hour.

Where the Word Comes From

Aperitivo comes from the Latin verb aperire, "to open." In medieval Latin, aperitivus described drinks believed to "open" the appetite or digestion.

That belief is preserved in the word's history, not as a proven physiological effect but as the traditional meaning the name has carried for centuries.

From 19th-Century Cafés to the Modern Ritual

Aperitivo took its current social shape in the 19th century, when fashionable cafés in Turin, Rome, Genoa, Florence, Milan and Venice began serving these drinks before dinner. Modern vermouth was developed in Turin, which became one of the era's key aperitivo hubs.

What's Typically Served

Aperitivo drinks tend to be lower in alcohol and bitter in profile — vermouth, bitter-based cocktails, sparkling wine — alongside common non-alcoholic options. Food stays light and small: olives, crisps, cheese, small sandwiches, focaccia. The point is to accompany the drink, not to make a meal of it.

Apericena: When the Hour Stretches Into Dinner

The ground for apericena was partly laid in the 1970s, when the American habit of pairing a substantial food offering with a drink during happy hour crossed the Atlantic in reverse and pushed aperitivo in Italy toward heavier food.

Apericena blends "aperitivo" with "cena" (dinner), describing aperitivo that has grown into a dinner replacement. It took hold in Milan from the mid-1990s and later spread to other Italian cities.

The shift is debated: some food writers see it as a departure from aperitivo's original simplicity, others as a natural evolution of the custom.

A Ritual Built Around Company, Not Drinking

Aperitivo's real function is togetherness — a way to meet friends or colleagues in the gap between work and dinner, with the drink and snack as the occasion rather than the point. Similar pre-meal customs exist elsewhere: Spain's tapas, France's apéritif from the same root, Turkey's meze — each shaped by its own context, none interchangeable with the others.
