Ribeye or Filet Mignon? Antrikot vs Bonfile

The Short Answer: It's About the Muscle

Ribeye and filet mignon — what Turkish menus call antrikot and bonfile — split the same way most steak comparisons do: one cut comes from a muscle that works constantly, the other from one that barely moves. That anatomical difference drives everything else.

Ribeye is taken from the rib section, between the shoulder blades along the back. Filet mignon comes from the tenderloin, the psoas major muscle that runs along either side of the spine.

Why Ribeye Carries More Fat

The rib section is built from the longissimus dorsi plus two smaller muscles, the complexus and spinalis — the spinalis often prized separately as the "ribeye cap." Because this muscle group constantly supports the animal's back, it develops the intramuscular fat known as marbling, which keeps the meat juicy and gives it a pronounced, beefy flavor even under longer cooking.

Why Filet Mignon Is So Lean and Tender

The tenderloin does very little work in a live animal, which is exactly why it is the most tender cut of beef. That same inactivity means it carries little fat, so filet mignon reads as milder and cleaner in flavor than ribeye — one reason it is often served with a sauce or a strip of bacon to add richness back in.

Telling Them Apart at a Glance

Without a label, look at the cross-section. Ribeye shows an off-center "eye" muscle with a smaller lobe of meat — the ribeye cap — separated from it by a thin seam of fat, so the shape is never perfectly symmetrical.

Filet mignon is a single, uniform muscle: a long, tapered cylinder that narrows from a thicker butt end to a slim tail end, with no seams or secondary muscles in sight.

Cooking Method and Price Follow the Same Logic

Ribeye's marbling lets it handle a longer sear or a higher doneness without drying out. Filet mignon, lacking that fat cushion, is best kept to a quick, hot sear — push it too far and there is nothing left to keep it moist.

Because only a small amount of tenderloin can be butchered from each animal, filet mignon ranks among the most expensive cuts of beef, while ribeye's larger rib section makes it comparatively more accessible.

Which One to Order

Choose ribeye for a bolder, fattier bite with real char and marbling behind it. Choose filet mignon when texture is the whole point — a cut that yields with almost no resistance, at the cost of some of that beefy intensity.

Antrikotun sürekli çalışan bir kastan, bonfilenin neredeyse hiç çalışmayan bir kastan gelmesi mantığı çok net anlatılmış.
