Adana's Cuisine Is Shaped by Çukurova's Hot Climate

In Adana, butchers still hand-mince the meat for Adana kebab with a wide, two-handled blade called a zırh rather than a grinder — a same-day, machine-free method suited to a hot climate where meat is not meant to sit. Türkiye's Patent and Trademark Office registered the recipe as a geographical indication in 2005, filed by the Adana Chamber of Commerce.

The official specification calls for meat from rams at least one year old, raised on natural highland pasture — not the lamb ("kuzu") often cited online. Tail fat is added at up to 15% of the minced meat's weight, mixed with red pepper and salt at roughly five parts per thousand, then hand-pressed onto flat iron skewers and grilled over glowing charcoal without a fan.

Why Chili Belongs in a Hot Climate

Adana kebab's specification allows only red pepper, salt, and fresh chopped chili in the mix — nothing else. Capsaicin-driven sweating is a documented cooling mechanism, one reason chili-heavy cooking recurs across hot-climate cuisines worldwide, Adana included.

Turkish dictionary sources define isot, a dried and ground red or black pepper flake associated with the region neighboring Adana, differently from the plain "red pepper powder" the Adana kebab spec calls for — a reminder that not every chili product from Türkiye's south is the same thing.

Cold and Sour on the Side: Şalgam, Ayran, Sumac Onions

A rich, fatty, chili-forward kebab rarely appears without something cold and sour beside it. Şalgam, a salty, sour turnip-based drink specific to the Adana–Osmaniye–Mersin area, is registered as "Adana Şalgamı" as a geographical indication; ayran plays the same cooling, palate-cutting role.

The kebab's own spec calls for an onion salad of chopped onion, parsley, sumac, and salt served with citrus wedges — the same sour-against-rich contrast repeated on the plate.

Bici Bici: Adana's Answer to Summer Heat

On summer streets in Adana, vendors shave ice over cubes of cooled starch jelly, then finish it with rosewater or cranberry syrup and powdered sugar — a dessert called bici bici, eaten almost exclusively in hot weather. It was registered as a geographical indication in the "ice cream and edible ices" category in 2020.

How Çukurova's Farmland Feeds the Table

Adana sits inside Çukurova, a Mediterranean-climate plain with hot, dry summers and mild, wet winters — Adana's own average runs from 9°C in January to 28°C in August, with about 647mm of rain a year. The region supplies roughly half of Türkiye's citrus exports and 70% of its turnip production, alongside major cotton and soybean output.

That agricultural abundance is what puts fresh tomatoes, peppers, onions, and citrus on the plate next to the kebab in such quantity — the farmland is not incidental to the food culture, it sits directly upstream of it.

Şartnamenin "kuzu eti" değil en az bir yaşındaki koyun eti şart koştuğunu bilmiyordum, çoğu yerde yanlış anlatılıyormuş demek.
